About the Recipe
This classic French style chicken stew is a hearty and flavourful dish for the winter months.

Ingredients
1 kg of chicken drumsticks
1/2 lemon
1 oz white vinegar
Salt & Pepper
Dry parsley
Garlic
Paprika
Mushrooms
1 onion
1 carrot cut in cubes
Dry parsley
Garlic
Bay leaves
Crushed (Chopped) tomatoes
1/2 cup of cognac or brandy
1 cup of red wine
1 cup of chicken or vegetable broth
Preparation
Step 1
First, mix the chicken drumsticks with the lemon juice, white vinegar, garlic, dry parsley, chilli powder to taste, salt and pepper. Let rest and marinate for 20 minutes.
Step 2
Fry and mix the chopped mushrooms with olive oil, butter, onions, carrots cubed, dry parsley, garlic, salt, bay leaves, pepper, crushed tomatoes, the cognac (brandy), red wine and chicken (vegetable) broth.
Step 3
Now we sear the chicken drumsticks that have been marinating. Then we introduc the mushroom sauce previously prepared. We mix all the ingredients and cook for 10 minutes.
Step 4
After the 10 minutes, add 1/2 cup of cold water that has been stirred with corn starch. Cook for an another 5 minutes until thickens. We then add fresh parsely and let rest before serving.
